I mistakenly bought pumpkin pie filling instead of raw pumpkin for the kitty cat, now i have 1 random can.. .any good recipes?

  • You can mix it with cake mix to make muffins. Spice cake mix is a good one for that.

    Or, pumpkin pie.

    Mix it with low cal whipped topping for a tasty parfait. You can freeze unused portions for later. It would probably be yummy mixed with Greek yogurt too.

    Healthy Pumpkin Pie Custard (76 calories)

    Ingredients:
    • 1 can (15 ounce) pure pumpkin
    • ½ cup 1% milk
    • 4 beaten eggs
    • ½ teaspoon salt
    • 2 teaspoons vanilla extract
    • 2 teaspoons pumpkin spice
    • 1 teaspoon vanilla liquid stevia
    • Optional toppings: Dairy Free Whipped Cream, Sprinkle of nutmeg

    Instructions:
    1. Preheat oven to 350 degrees.
    2. Spray 6 ramekin or custard cups with nonstick cooking spray.
    3. In a large bowl mix together pumpkin, milk, eggs, spices and stevia.
    4. Pour evenly into ramekins.
    5. Bake for 40 minutes or until a knife comes out clean.

    YES!!!! I love pumpkin chili! it's so freaking yummy!!

    but there's loads of different things you could do: pumpkin muffins, pumpkin pancakes, pumpkin pie, pumpkin cookies, pumpkin granola, pumpkin ice cream, pumpkin pasta dishes, pumpkin smoothie, pumpkin butter!

    Try this....

    I think it was the Hungry Girl show on FoodTV recently that she used a can of pumpkin pie filling in a boxed brownie mix in place if most of the other wet ingredients. My wife made it and it was wonderful. It was not overpoweringly pumpkin taste and the calorie count was way down due to the mix being used to replace other higher calorie ingredients.

    Added Link for Recipe. (even though recipe calls for pure pumpkin, we just used the canned stuff since we had it at home.

    Ooooh....this is a good idea......the pumpkin pie filling already has sweetener and spices....so one step & you're good to go.

    Thanks for all the recipes!! I might try the mousse recipe - i won't use whipped topping tho, real whipped cream!!!
