Am I the only one who salts their eggplant before cooking? Takes the bitter taste out.0

This is a dish that I make that is pretty tasty and has eggs so there is a protein component.
1 large eggplant - fresh. (this is important, eggplants with a lot of seeds in them etc, are not very tasty) Chop into small (less than 1 inch) cubes.
2 eggs
2-3 tbsp olive oil or canola
1 large tomato chopped up
Whole cumin seeds - 1 tsp
Whole dried red peppers - 1 or 2 (optional)
Heat oil at med-high, put cumin seeds and dried red peppers in hot oil. Cumin seeds will pop. Red pepper will darken in color.
Add tomato and cook for about 3-5 mins until soft.
Add the eggplant and toss with spices and tomato until covered. About 3-5 mins. Lower heat to medium-low and cover. Add a tbsp of water if necessary, but may not be. It will take about 10 -15 mins for the eggplant to soften and cook. You can tell if the eggplant is cooked by looking at the chunks. If they are whitish and hard - still raw. Stir often while its cooking so that it does not stick,
Once eggplant is cooked make a little space in the bottom of the pan and put 1 tsp of olive oil. Add two eggs and scramble. Mix with the rest of the eggplant when eggs are cooked.
Top with cilantro leaves or serve as is, hot.0 -

Not sure if anyone mentioned simply breading them then sautéing in olive oil for a snack or appetizer. It's not low calorie, but what a classic treat to have once in a while.0

I made this and it was very satisfying - I felt like I was cheating ;-) Just make sure to sweat the eggplant slices first. I also tweaked it a little by placing the eggplant on a bed of diced tomato and using my own sauce, and only half the cheese. It was still scrumptious:

I highly suspect that the eggplant haters just haven't had it cooked correctly. Just like Brussels sprouts they are often misunderstood and poorly cooked.
no, it's just disgusting. Brussels sprouts, on the other hand, are delicious.
I love eggplant....but brussel sprouts are like vomit balls. I can't get past the smell.0 -
Not sure if it's been recommended yet but I highly recommend making ratatouille with the eggplant! So delicious and simple! And HEALTHY!0
