Lemony spaghetti squash slaw

4-6 cups shredded spaghetti squash, chilled, optionally rinsing the strands of squash to remove stickiness
1 cup chopped fresh cilantro
1 oz. grated peccorino romano cheese or other grating cheese
1 lemon, juice and zest
3 tablespoons olive oil
1 tablespoon honey (optional)
1 teaspoon dried herb mix, e.g. Italian herbs, herbes de Provence, fines herbes
Salt and pepper to taste

Toss together the spaghetti squash, cilantro and cheese.

Whisk together lemon juice, zest, olive oil, honey, dried herbs, salt and pepper. Pour this dressing over the squash mix. Toss to mix thoroughly.

Serve chilled.

    It depends on how many servings you divide it into and exactly how much squash, etc., you use but if you use 6 cups of squash and divide it into 6 servings, it's about 136 calories/serving. 4 cups of squash divided into 4 servings, it's about 182 calories/serving.

    Spaghetti squash
    I know it had greek yogurt on it and some red pepper flakes or cayene...hmm...

    and top your ruben with it. Or whatever sandwich

    There's a spaghetti squash on my kitchen counter I've been wondering what to do with it besides the usual use it as spaghetti thing. This sounds much better!
