I make turkey pumpkin chili in the crock pot - just basically turkey chili with canned pumpkin and pumpkin pie spice0

i've been having this before my workouts - so simple and tastes amazing!
1/4 cup of pumpkin puree
1/2 cup of fat free ricotta cheese
1/2 scoop of protein poweder (i used protizyme peanut butter cookie)
1 packet of truvia
all mixed together and topped with 1 tbsp of chocolate chips0 -

When I make it comes out to around 421 calories with 47C/11F/3F/51P for the entire pie! It's really good with Reddi Whip AND Ice Cream.

Any savory, not sweet recipes? I saw once for a tomato-pumpkin bisque that I adapted to make tomato-sweet potato soup, but I haven't actually tried it with pumpkin. May have to -- I have a giant can I need to use.
And believe it or not, the tomato-sweet potato soup IS a hit at potlucks. Tastes better than it might sound. The sweet potato is just sweet enough to take the place of the sugar you usually have to add to tomato soup. I also add red lentils sometimes.

Here's a super quick pumpkin soup I like...
Ingredients
1 can white beans (15 ounce, rinsed and drained)
1 onion (small, or 2 tsp. onion powder)
1 cup water
1 can pumpkin (15 ounces, plain)
1 can chicken or vegetable broth, low-salt (14.5 ounces)
1⁄2 teaspoon thyme or tarragon
salt and pepper to taste (optional)
Preparation:
Blend white beans, onion, and water. In a soup pot, mix bean puree with pumpkin, broth, and spices.
Cover and cook over low heat about 15 to 20 minutes until warmed through.
You also can add a couple tsp of plain yogurt or sour cream when serving it up.

I made Pumpkin Spice Waffles today , delicious. Found this recipe on Pinterest
Pumpkin Whole Grain Waffles
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Yield: 12 waffles
Serving Size: 1 waffle
Gather
2 eggs, beaten
1 3/4 c skim milk
1/2 can canned pumpkin
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
1 c whole wheat flour
1/2 c flax seed meal
1/4 c wheat germ
1/4 c all-purpose flour
4 tsp baking powder
1 tbs sugar
Step by Step
Mix all ingredients together (I love my KitchenAid for this!), starting with the wet ingredients and slowly adding the dry ones.
Preheat a waffle iron and coat with cooking spray.
Using an ice cream scooper (that has the little thing that scrapes it out), pour batter onto iron. Using the scooper minimizes the mess and helps with portion control.
Cook in batches until golden brown.
I have found that these waffles take a little longer to cook than traditional "white" waffles, maybe 3 minutes or so.
Eat immediately or cool and freeze between sheets of parchment paper.

Easy old school WW recipe.
1 box of spice cake
1 can of pumpkin
Don't use the eggs/oil
just mix the mix and pumpkin together and bake. It will be a bit lumpy but it stays moist and is so good. My mom would add a bit of milk and every so often I would put raisins in it.0 -

Made this yesterday and it was fabulous:
1 individual container low fat french vanilla greek yogurt (I used oikos)
1/4 cup pumpkin puree (I used libby's canned)
1 packet splenda
1 tsp brown sugar
1/2 tsp cinnamon
shake of pumpkin pie spice
(cinnamon and pumpkin pie spice are whatever strength you like)
drop of vanilla (optional)
Stir and eat! About 165 cal and 12.5g protein. You can eat plain, or use as a dip with apples or graham crackers. I'm going to try freezing in between cinnamon graham crackers as an ice cream substitute.0 -

I made a few changes, and it really is WAY better cold. It was good warm, but I could taste the stevia. But cold, omg it tasted just like a regular homemade pumpkin pie minus the crust. I made it with unsweetened vanilla almond milk, 1 tsp of unflavored liquid stevia (that's all I could find) and added 2 Tbs light brown sugar. I baked it in like a 8x11 pan, and cut it into 8 pieces. It came out great, but I did have to bake it a little longer because of using a single pan. We did add real whipped cream, and my teenage boys loved it!!
Healthy Pumpkin Pie Custard: Gluten Free & Low Carb
Ingredients
•1 can (15 ounce) pure pumpkin
•½ cup milk
•4 beaten eggs
•½ teaspoon salt
•2 teaspoons vanilla extract
•2 teaspoons pumpkin spice
•1 teaspoon vanilla liquid stevia
•Optional toppings: Dairy Free Whipped Cream, Sprinkle of nutmeg
Instructions
1.Preheat oven to 350 degrees.
2.Spray 6 ramekin or custard cups with nonstick cooking spray.
3.In a large bowl mix together pumpkin, milk, eggs, spices and stevia.
4.Pour evenly into ramekins.
5.Bake for 40 minutes or until a knife comes out clean.
6.Best served cold. Top with dairy free whipped cream! Sprinkle with more nutmeg!

So I made the recipe! I bought mini graham cracker pie crusts to put the mix in and used 1/3 cup stevia and 1/3 cup sugar. It also took about an hour to cookie through. They came out amazing! Especially with some lite cool whip. Love. Thank you!0 -
