What's 'French' food for you?

Ok, totally curious. I grew up in France and I'm not exactly sure what I consider 'French' food. There are quite a few regional dishes that are pretty different from each other.

The cultural food thread made me wonder though... what does everyone consider French food?

    Creamy sauces, cheeses, butter butter beurre, lovely vegetables like asparagus, beefs with lovely sauces, small meals exploding with flavor.

    That would be my guess.

    Je voudrais prend du cuisine francais.

    really fresh salads and vegetables, le fromage, le pain, lots of meat (charcuterie), of course les patisseries, pure delicious butter, good strong coffee (le cafe creme!) and regional dishes like bouillabaisse, um and maybe fondue although perhaps that is technically more Swiss or Belgian?

    Actually, I remember eating really good Indian food in France!

    I always break it up in my head. Southern France: herbes de provence, fresh vegetables, olives, seafood, bouillabaisse. Northern France: cream sauces, heavy stews, cheeses.

    Then there are the classic foods: croque madame/monsieur, croissants, crepes, frites, escargot, boeuf bourguignon, coq au vin, vol au vent... I could go on.

    Oh, and the desserts: macaron, eclair, dacquoise, genoise...

    Cassoulet (I don't like it by the way)
    Boeuf bourguignon
    Pâtisserie (Paris-Brest, éclairs, bavarois, millefeuille...)
    Croissants

    There are so many regional cuisines that it is hard to pick a single dish.

    Pure beautiful local seasonal ingredients prepared and presented perfectly. The ingredients and preparation depend on where you are and when you are there.

    Sort of like what is barbeque? (I believe NC Piedmont topped with slaw)

    baguettes and delishious cheeses, moules marinier, croissants, french onion soup and fish soup (I forget what it is called!) We camp there most years but have missed the last two and now I want to be there as this has made me think of all the foods we enjoy daily when camping there. There are of course plenty of more fancy but really nice foods too but these I have written tend to be our staples when there.

    I'm mostly familiar with regional (aka French Canadian) foods like tortiere, cretons, poutine, pea soup and of course cheddar cheese with apple pie. The only classic/traditional french dishes I think I've ever had are croissants, crepes and Coq au Vin. The latter being one of our favorite winter meals. So worth the calories!

    I had cheddar cheese on apple pie. Had seen that in movies. Holy Jeez, that is sooooo good. It's fruit and cheese, baby!

    Yeh, most other provinces consider Quebec the out of work sibling who sleeps on your couch and drinks all your beer, but he's still family I guess :p

    When people ask me if I miss France I say I miss the food! Gorged myself sick last time I went. Hoping (and dreading) to go back next year.
