Steak, salad, roasted brocolli, sweet potato, pumpkin.
A couple of lunches pre-prepared for work. Chicken breast, sweet potato, roasted broccoli and pumpkin.
Brunch for my son's birthday, 'Asian' Omelette (which was more like scrambled eggs) with mushrooms inside, soy and ginger sauce with pistachio nuts on top. Really good.

I made a pot of black eyes for the coming week, so I heated up some of those with some chopped turkey, cheese, mushrooms, carrots, raisins and pepita seeds. Sides of red bell pepper and cucumber.

A couple of weeks back my husband I had Vietnamese pancakes that were stuffed with veges, and little pieces of pork crackling.
They were really good, the pancakes were basically just egg, so I used that as inspiration for my lunch. I pre-made my lunch for the next couple of days last night, I cooked an egg omelette and stuffed it with green veges seasoned with ginger and chilli and a few slices of roasted pork loin. Then I took about a tablespoon of the crackling, and chopped it up and sprinkled it over top.
The crackling bits are basically little fatty, salty, crunchy bits of ... YUM.
I have tomorrow's lunch in the work fridge right now and I want to eat it NOW.
The egg was underneath all the veges... this is the worst food photo I've ever taken. LOL
Last nights dinner, roast pork loin with crackling, overcooked pumpkin and salad.

Tonight's dinner is a cup of the black eyed peas I made on Sunday heated with a nitrate free hot dog, carrots, raisins and parm cheese, a salad and some fresh raspberries.

Just sauteed in a cast iron skillet with olive oil and salt and pepper (and in that pic, halved cherry tomatoes).
I usually get the bag of organic tuscan kale from Trader Joe's so it's already cut and washed. It still has the ribs but I don't mind them.0 -

Breakfast - Chorizo, egg, potato and cheese breakfast burrito.
Dinner - Turkey sandwich on a cheddar roll with pesto, avocado, provolone, onion, lettuce and tomato. Sides of cucumber and fresh raspberries.
Dessert - Raspberry and white chocolate cheesecake.
