I just wrote a blog too, but I really like these, so I thought I'd share.

This is the original recipe I found w/ the directions. I used different ingredients though.

Ingredients

2lbs Ground Beef (93%...95% would have been better)

1 cup chopped green onion

1 cup stove top chicken stuffing mix

1/2 cup eggbeaters original

This made 24 regular sized cupcakes. I also used tin foil cupcake holders, which helped a lot. The cupcakes actually kept the cupcake shape (mostly)...last time they turned into little meat balls. haha

The frosting is just mashed potatoes with food coloring...so the calories really depend on how you make them....I use a pretty decent amount of butter.

I used 8 russet potatoes (or 1200 grams), 5 Tbsp of butter, garlic powder, Italian seasoning, 1 cup almond milk.

Here are the nutritional counts using MFP's recipe tool for 1 cupcake. (I don't have some of the other nutrition facts, this is just what I use on my diary)

    They are cute but I dont think I can get down on the wave of calling things like meatloaf and lasagne cupcakes lol. Im old school.
