So everyone loves low calorie single serve meals. And what better way to enjoy them than eating it out of a mug!! Especially in the fall.
I would love if everyone would post a single serve meal in a mug recipe. I myself am I vegetarian so all of my mug meals will not involve meat, however there are many that do. But right now its snack time so apple pie it is!
One sliced apple, half a teaspoon of cinnamon a pinch of nutmeg. Mix a teaspoon of light brown sugar, a tablespoon of oatmeal, and a splash of water (in substitute of butter) and heat crumble on top.
Heat for 60 seconds and ta daaaa!

Me too. It reminds me of a delicious lunch my mom used to pack for me in Elementary School, but she just used to cram it into a plastic bag. I bet it's much tastier crammed in a mug.0 -
OK now I feel guilty for being a wise-a** so here is a real mug recipe:
Coffee Cup Chilaquiles
1 egg
1 tablespoon milk
Salt
Ground black pepper
1 tablespoon sharp cheddar cheese
5 tortilla chips, divided
1 tablespoon salsa
Sour cream
Queso fresco
Chopped green onion
1. Beat egg and milk with a fork in a coffee cup, adding salt and pepper to taste. Add cheddar; stir to coat. Break 3 or 4 tortilla chips into small pieces to fit in the cup; stir into the mixture. Add salsa.
2. Microwave on high until done, about 1 minute, 10 seconds. Garnish with remaining tortilla chips, sour cream, queso fresco and green onion.0 -

Hey! Lol by the time you finished it was in a mug technically, but I'll admit the second recipe sounds a whole lot better!0 -
LOVE These!!
How to make a mug pancake:
1 banana
1 egg ( or 2 if you want )
1/2 cup oats ( ground up in a blender if you want)
cinnamon ( however much you want)
vanilla extract (not necessary)
1 scoop of cottage cheese (or plain greek yogurt/apple sauce)
whatever else you want : protein powder, fruit, peanut butter, chocolate chips etc
i put the banana in the microwave for 30 seconds and grind up the oats in a blender so it becomes flour. I mash the banana in a mug then add the oats and egg. Mix it all together. Then I add the scoop of cottage cheese, stevia, and cinnamon and anything else. Then mix and stick in the microwave anywhere between 2 -2.5 minutes.
some people don’t like cottage cheese but you honestly cant even taste it ! it makes them so much better too! Also if i ever have protein powder ill add a scoop .Or chocolate chips. Anything! You want it to have a batter like consistency. So not to watery. Its soooo easy and I usually plop it out of the mug, cut it into 3’s and put butter on top.0 -
Need to try some of these! Thanks.0

I also do a variation on chocolatecoveredkatie
3 tbsp flour (I do 1tbsp wholemeal, 2 white)
1tbsp 2 tsp cocoa powder
1 tbsp 1 tsp sugar
0.5 tsp baking soda
2 tsp peanut butter
0.25 tsp vanilla essence
3.5 tbsp milk
In the microwave for about 40 seconds
I normally take it out before it's cooked all the way through and then it's like a self-saucing cake with half cake mix and half cake0 -
Great idea but there is only one of them I can use as all rest are carb laden. Anyone have some to post that are extremely low carb?0

1 cup plain greek yogurt, fat free
1/4-1/2 (depending how sweet and how much flavor you like) of a sugar free jello packet (the kind that makes 4 cups)
Stir in the jello very well until fully incorporated (takes some muscle), nuke for 90 seconds, stir very well, nuke again for 1 minute, stir, level ou the top, refrigerate and you're done.
I top with crumbled cookies and raspberries (you can also incorporate the cookies into the mixture during the last stir.)
It becomes thick like a crustless pie.
150-200 calories depending on the topping.0 -

Ground Cinnamon
Vanilla Essence OR Ground Turmeric
30-45ml Coconut Cream (or dairy cream if preferred but coconut mixes better)
Mix to a paste, add 1-2 raw eggs and whisk.
Pour in hot coffee, stirring as you go - the coffee won't be hot enough to cook the egg.0 -
Yum! Loving these great ideas of treats for one!0
