Healthy Eating Cookbooks

Hi, today I am makeing a crusched tortilla chip casserole, from No Whine with Dinner cookbook (mealmakeovermoms)! I like the convience of healthy eating cookbooks cause the authors did the work for me as far as what indgrediants to buy!!
What cookbooks, websites do you use/reccomend?

    I got a healthy eating cookbook for college kids, but I don't think I'd recommend it. I tried to make their eggplant parmesan last night and it did not go well. =( It's like they left out key steps to make it turn out well.

    On a related note: What's the best way to bread egg plant?? Do you take the skins off?

    I get a lot of recipes from The New Dieter's Cookbook from Better Homes and Gardens. I added tons of recipes from the cookbook to the recipe function on MFP to get a more accurate calorie count using my brands of foods, though.

    I also get quite a few recipes from the nutrition books that come with different Beachbody programs. The oatmeal recipe that I love came from the Power 90 guide, and I love most of the recipes from the P90X and ChaLEAN Extreme guides.
