Low fat/Low calorie Apple Cinnamon Muffins
Healthy Apple Cinnamon Muffins
INGREDIENTS:
1 ½ Cups unbleached all purpose flour
6 Tablespoons “Splenda Sugar Blend”
½ Teaspoon iodized salt
2 Teaspoons baking powder
1 1/2 Teaspoons ground cinnamon
1/2 Teaspoon ground nutmeg
4 Oz (1 container) baby food Stage 2 apples/applesauce
1 egg
½ Cup original almond milk
2 green apples, peeled, cored, finely chopped (yields approximately 2 cups)
DIRECTIONS:
Preheat oven to 400 degrees
In large mixing bowl, add flour, Splenda, salt, baking powder, cinnamon, nutmeg. Mix well with whisk.
In a smaller bowl, combine baby food applesauce, egg, almond milk. Mix well with whisk.
Pour wet ingredients into dry ingredients, stir with wooden spoon until well combined. Batter will be thick.
Fold in apple pieces.
Lightly spray muffin pan with non-stick spray. Add batter. Makes 12 muffins
Bake 18-25 minutes or until toothpick inserted into center of muffin comes out clean.
