Made it over the weekend, with blueberries only, (didn't have any peaches, and didn't feel like running to the store). VERY GOOD. I cut out the oil all together and used sugar free (home made) apple butter instead equal amounts. and used 3 whole eggs instead of 2 whites and 1 egg. The calorie calculator here has it a bit higher this way, I would have thought it would go down taking out the oil.0

I would like to try this. Did anyone cut out the oil and sugar? I would use splenda or maybe some vanilla sugar free syup. As far as the oil I would use apple sauce or maybe some almond butter? Not sure how that would work.0

I made the recipe without adding fruit and using 2 whole eggs, and it comes to 238 cals --- The oil is fine if you use olive oil, it gives you the fats that are good for you. I used canola because that is what I have on hand, but I plan to use olive next time I make it. I make banana bread w/olive oil too, and it's so yummy. It really makes for a lighter texture.0
