I was wondering if anyone had a healthy pancake recipe they would like to share?

    I have a great one not really a recipe per say but good none the less. I order it online. It is called New Hope Mills pancake and waffle mix. My 18 yr old skinny daughter is very finicky and really likes this. Low carbs and calories.

    There are some good recipes online for high protein by adding cottage cheese and protein powder to mix... I have not actually tried any of them so I can't recommend. Just try googling "Protein Pancakes" and try one... let me know if you do and if it is any good!!

    I usually just use regular mix and sugar free syrup. :)

    can't say they're all healthy, but they're not really "unhealthy" either. at least you know what's in them.

    i never make pancakes from a box. it's just not worth it.

    Ultimate Chocolate Protein Waffles

    Ingredients
    1 cup Soy Flour
    1/2 cup dry Cocoa
    1/2 cup Quick Cooking Oats
    3 tbsp Chocolate Rice Protein powder
    4 tsp Stevita
    3 tsp EnerG Egg Replacer
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    1 cup Chocolate Soymilk
    3/4 cup All Natural Applesauce
    1/4 cup canola oil
    1 tsp vanilla

    Directions

    Preheat waffle iron to medium/hot setting.

    Combine dry ingredients in medium mixing bowl. Sift to mix ingredients. Add wet ingredients and stir thoroughly. Allow batter to set 5 minutes while waffle iron heats.

    Spray waffle iron with non-stick cooking spray. Drop batter on heated waffle iron wells. Allow at least 1/2" spacing for batter to expand. Close and cook. Allow all steam to stop coming from waffle iron. Remove crisp waffles and repeat until all batter is used.

    Serving size: 2 waffles
    Approximately: 5 Servings

    Better Buckwheat Pancakes

    Ingredients

    1/2 cup Buckwheat Flour
    1/2 cup Soy Flour
    2 tsp Ener-G Egg Replacer
    2 tsp Stevia
    1 tsp Baking Powder
    1/4 tsp Salt
    1 1/2 cups Soy Milk
    1/4 cup Toffuti Sour Supreme
    3 tbsp Canola Oil
    1 tsp Vanilla Extract

    Directions

    In medium mixing bowl combine all dry ingredients and sift. Incorporate wet ingredients and mix thoroughly. Set aside and let batter rest 5 minutes.

    Heat griddle to 300 degrees or medium-hot heat. Spray with non-stick cooking spray. Spoon batter onto griddle making pancakes approximately 3 inches in diameter. Let pancakes rise, then flip and cook other side. Repeat until batter is gone.

    Makes approximately 8 fluffy pancakes.

    Blueberry Pancakes (Cooking For 2)

    You're minutes away from some berry delicious pancakes! From eatbetteramerica.

    Prep Time:15 min
    Start to Finish:15 min
    makes:2 servings (4 pancakes each)

    1 cup Bisquick Heart Smart® mix
    2/3 cup fat-free (skim) milk
    2 tablespoons fat-free egg product
    3/4 cup fresh or Cascadian Farm® frozen organic blueberries (thawed and drained)

    1. In small bowl, stir all ingredients except blueberries until blended. Gently stir in blueberries.
    2. Pour batter by slightly less than 1/4 cupfuls onto hot greased griddle.
    3. Cook until bubbles break on surface. Turn; cook other sides until golden.

    I make mine using Bob's Red Mill buttermilk whole grain pancake mix from the organic section in the grocery store. I just follow the recipe and add in pure vanilla extract and chocolate chips or blueberries (could have them plain as well) and they are yummy with whole blackberry syrup (1tbs = 45 calories). For the chocolate chip ones each pancake (I use 1/4 cup to pour the batter) is about 129 calories.
