Pineapple Pudding Cake

I found this recipe in the Taste of Home Comfort Food Diet Cookbook- Very Simple and Delicious!

Pineapple Pudding Cake

1 pkg (9 oz) yellow cake mix
1 & 1/2 cups cold fat free milk
1 pkg (1 oz) sugar free instant vanilla pudding mix
1 pkg (8 oz) fat free cream cheese
1 can (20 oz) unsweetened crushed pineapple, well drained
1 carton ( 8 oz) frozen fat- free whipped topping, thawed
1/4 cup chopped walnuts, may be toasted
20 maraschino cheeries, well drained

- Prepare cake mix batter according to package directions, pour into a 9x13 in baking pan coated with cooking spray. Bake as directed. Cool completely on a wire rack.

- In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a small mixing bowl, beat cream cheese until smooth. Beat in puding mixture until blended. Spread evenly over cake. Sprinkle with pineapple. Sprinkle with walnuts and garnish with cherries. Refrigerate until serving.

Yield: 20 servings

1 piece equals 131 calories, 2 g fat, 1 mg cholesterol, 217 mg sodium, 24 g carbohydrate, 1 g fiber, 3 g protien.

    The title of this caught my attention! I love all 3 ..... pineapple, pudding and cake :smile:

    The recipe sounds DELICIOUS!

    I'm single so I rarely cook, but I'm going to have to make an exception for this one.

    Do you know by any chance how much sugar is in one piece? I watch that closely as well.
