Spicy Asiago Ranch Chicken

Sorry I have not posted in so long! Been sooo busy.

I got the idea for this meal from Wendy's. Too bad I'm not about to eat that 660 calorie sandwich!

Chicken and Breading:

1.5 lbs boneless, skinless, chicken breast
1 egg white
1 tsp water
Mrs. Dash Extra Spicy seasoning (cayenne or crushed red pepper will work too)
1/2 oz grated Asiago Cheese
1/2 cup panko breadcrumbs

Preheat oven to 450, grease a foil lined cookie sheet with olive oil cooking spray.

Mix together egg white and water, set aside. Mix together bread crumbs, asiago cheese and seasoning of choice to taste. I used 1 tsp of the Mrs. Dash Extra Spicy. Rinse chicken with water and pat dry. Dip chicken into egg white mixture then drench in breadcrumb mixture. Place on greased pan and spray tops and edges with olive oil cooking spray.

Bake for 20 min, turn over and cook for 10-20 more minutes or until cooked thoroughly (will vary depending on thickness of chicken)

Topping for Chicken:

5 slices bacon (I used what I had, smokey maple bacon for nutrition info)
5 slices tomato
5 lettuce leaves
2.5 Tbsp Bolthouse Farms Yogurt Ranch Dressing
2.5 oz. thinly sliced or grated Asiago cheese

Can be eaten with or without bun. Top each piece of chicken with 1/2 oz cheese, one slice of bacon (cut in half ), one tomato slice, one lettuce leaf and 1/2 tbsp ranch.

Nutrition info does not include bun.

Makes 5, 4 oz portions

Calories 262, Carbs 7, Fat 13, Protein 32, Fiber 1, Sodium 636

    Thanks for sharing! I think I'll omit the ranch and bacon and just load up on veggies but it sounds AWESOME!

    Wow! That sounds fantastic. Those stupid commercials are starting to get to me. I pass a Wendy's on my way to school and have been soooo tempted to get one of those new sandwiches. Now I don't have to! I think I"ll use my abundant supply of Greek Yogurt instead of the Ranch but I can't wait to try it! Thanks!

    Just wanted to add..next time I make this, I am adding some cayenne pepper to the egg white b/c it wasn't spicy enough for my taste! Also, it turned out really crispy on the outside and juicy and tender on the inside!

  • Sounds delicious. I'm going to have to try it. I've been tempted by Wendy's and that sandwich too; the only saving grace about it so far is they make it with grilled chicken too. But that sandwich is still almost 500 calories.

    I got it at a grocery store here called Meijer. It's the only place around here I've seen it but I'm sure you can get it elsewhere. Or you could even make your own with the hidden valley ranch dressing mix, greek yogurt and skim milk. If you use the nonfat greek yogurt, its only 20 calories for 2 tbsp and 0 fat! I usually make my own :)
