Pumpkin Ancho Chili

Good morning!

This weeks soup of the (every)day has been a chili. I had some leftover pumpkin from testing out a "pumpkin pie oatmeal" idea and it was the perfect addition to our turkey chili recipe. Doctored up a little with a few extras to compliment the pumpkin.

And lately, big love for rehydrating ancho peppers. They are the weird dry brownish red peppers in the produce aisle, and in 10-15 minutes are a great mildy spicy compliment to all kinds of dishes!!! (Thanks Rachael Ray. She calls them a spicy raisin and uses them often).

    In a pinch you can also sub ancho chipotle chili powder for the reg stuff - Can be found at any bulk or whole foods store and it's a great spice to have kicking around :wink: We spice a LOT and probably use way more than 1 Tbsp in our chili, however...
