Yummy Pita Pocket Pizzas for one

I am sure many of people have made something like this but I thought I share what came up with.
1 multigrain Sahara Pita Pocket or whatever kind you prefer- 140 Calories
Mixture of veggies, I use zucchini, summer squash, mushrooms, onions, garlic of course basically any veggie you would like. Cut enough to fit on the pocket (s) if your making more than one. I figure about 20-40 calories for the veggie mixture for one serving
Saute veggies with Olive oil cooking apray and a drop or two of regular olive oil
1/4 shredded low moisture part skim mozzarella chesse 90 calories
Pizza sauce, I use enought to cover the bottom, usually whatever the serving is on the can/bottle- 25 calories
Place pizza sauce on pocket add veggies and bake in the oven at 350 degrees until cheese is melted and bubbly
I figure these pizza's are under 300 calories. Very tasty and healthy!!!
Serve with a nice salad

I had my first pitta pizza today, where have they been all my life! Such a great idea to add zucchini and squash, i'll definitely try that.0

Joseph's offers an amazingly low calorie pita bread for just 60 calories.
I use them all of the time for pita pizzas, and in replace of my bread.
Plus, walmart sells them in the deli section!0 -
