Dinner for Two :)

I would like to cook a delicious & healthy dinner for my boyfriend and I tomorrow night. (Keep in mind, i RARELY cook). I've found a good recipe for chicken as our main dish.. I'm also going to put asparagus on the side. I need ideas for one more side. I was thinking about some sort of potato (my favorite!), but I don't know if there's such thing as a 'healthy potato'. If anyone has ideas for a side to go with chicken & asparagus, please share!! Thanks!

    if you want potato do a oven roasted baby red dish

    dice them up toss them in some EVOO and season with herbs and some pepper

    Mashed Mock potatoes


    cut up fresh cauliflower in a pot to boil, boil for about 8 mins then add 2-3 potatoes cut up, boil until done then drain add just a little bit fat free milk ( you use less then with regular mashed potatoes) salt pepper, and garlic powder then mash them up like mashed potatoes,

    this is delicious I promise my kids loved it and asked if I could make it like this for thanksgiving dinner from now on LOL ENJOY

    try cauliflower mash. Just steam it and mash it like you would potato, it's super yummy!
  • Sweet potato would have more nutrition than white. Brown rice is what I make for a low cal side. Goes well with just about everything. Cook in chicken broth for added flavor and toss in a few herbs of choice.

    I like to take baking potatoes and slice them up like wedges, drizzle with EVOO and seasoning salt and bake in the oven. Awesome and healthy "fries"!!!! Can also be done with sweet potatoes, thinking I may try that soon as well!
  • Roasted baby red potatoes, or mashed potatoes made me greek yogurt instead of milk and butter.
