  • If you have a Trader Joe's in your area. Look for No Pudge Fudge. It is more like a brownie and they are yummy. It uses yogurt. They are so good!!!
  • Low fat Brownie in a Mug (From the Live Strong Website)

    Ingredients
    1 tbsp Plain Flour
    1 tbsp Granular Low Calorie Sweetener
    1 tbsp Cocoa (natural, Unsweetened)
    1/8 tsp All Purpose Baking Soda
    1/8 tsp Salt*
    1 1/2 tbsp Unsweetened Applesauce
    1/4 tsp Cinnamon Ground

    Directions
    Combine and pour into coffee mug then pop into microwave for 1 minute!

    1/2 cup (125 mL) all-purpose flour
    1/2 cup (125 mL) unsweetened cocoa powder
    1/2 tsp (2 mL) baking powder
    1/4 tsp (1 mL) salt
    2/3 cup (150 mL) granulated sugar
    1/4 cup (50 mL) butter, melted
    1 egg
    2 tbsp (25 mL) milk
    1/2 tsp (2 mL) vanilla
    1 jar (4-1/2 oz/128 mL) strained baby food plums
    Preparation:

    In bowl, sift together flour, cocoa, baking powder and salt ; set aside.

    In bowl and using electric mixer beat sugar with butter until combine but not smooth; beat in egg, milk and vanilla. Using wooden spoon, stir in flour mixture alternately with plums, making 2 additions of flour and 1 of plums. Spread in lightly greased 8-inch (2 L) square cake pan, smoothing top.

    Bake in centre of 350°F (180°C) oven for about 20 minutes or until tester inserted in centre comes out with just a few moist crumbs clinging to it. Let cool completely in pan on rack.

    BROWNIES!!!
    174 calories
    serving:16 in an 9x13 pan.

    One box of Low-fat brownie mix, one cup of chocolate chips and one can of pumpkin. Bake as directed.. mix 1/2 cup of c. chips in the batter and 1/2 cup on top! soo amazing!

    We also freezed the left overs for the future!

    Black Bean Brownies

    1 box brownie mix
    1 can (15 oz) black beans

    Open the can of black beans, rinse well. With beans back in the can, add enough water to cover beans. Put in blender or food processor and puree. Add puree to brownie mix, and then bake according to package directions.

    My SIL made these, and they were delicious.
    I'm about to go make a batch of these myself for the first time, now that we've finished off the batch of delicious low-fat oatmeal chocolate-chip cookies I baked the other day.

    Have you tried the "No Pudge" brownie mix? I find it at Trader Joes.

    Sadly no, because I do not have a Trader Joe's or a Whole Foods Market within 100 miles!!!!

    I live in S.Carolina and I have found "No Pudge" brownie mix at Ingles & Bloom grocery stores also.

    Chocolate cake mix and pumpkin puree. Saw it on the Hungry girl show the other day. Mix it up, put it in cupcake papers and bake. Something like 180 calories per cupcake.

    we make the Trader Joes no pudge mix often in our house -- LOVE it -- even my little girls like it and "are fooled" i've also found that making the brownies in my mini-muffin pans makes it easier to have just one or two mini bites rather than cutting a huge piece from a cake pan

    I tried the brownie and diet cherry coke and it turned out good to me and it was low in calories.

    if you happen to live near a trader joe's they have a fat-free brownie mix :) It uses yogurt and is very yummy :) Otherwise I like betty crocker and use egg substitute in place of eggs and applesauce in place of oil :)

  • 1 package chocolate cake mix
    8 oz plain non-fat greek yogurt
    1 cup water

    Mix well

    Makes 20 cupcakes.
    Cook 20 minutes at 350 degrees

    103 calories per cupcake...pretty tasty with a spoon of fat-free whip topping (not included in the 103 calories)
