Italian Wedding Soup
This is a DELICIOUS chicken broth based soup with mini turkey meatballs and escarole (sub spinach if you cant find escarole). The old school Italian method also includes an egg or two scrambled and whisked into the broth at the end to form thin strands of egg, but I prefer it without.
