VERY yummy dinner!! Coconut curry chicken!

OMG this was so good! My sister gave me the idea. If you like Tofu, it tastes really good in it too!! It serves 2-4 people.

8 oz chicken or about 4 oz tofu
1 large bell pepper (your choice of color! The more colorful the better)
1 large yellow or sweet onion
1 bunch green onions
1 container mushrooms (I prefer portabellas)
1/3 can coconut milk
1 tbsp. coconut oil
some salt
lots of pepper
some basil
2 cups cooked brown rice

Marinade the chicken or tofu for at least 30 minutes in about 1/6 of a can of coconut milk, about 2 tsp. basil, and salt and pepper.
Put the coconut oil in the pan and melt over no higher than medium heat!
Put in the onions and pepper. add some pepper
Let cook until cooked down just a little.
Add sliced chicken and mushrooms, and the remaining 1/6 of the coconut milk.
Let cook until done.
Serve hot over brown rice. It is soooooo delicious, and it's about 450- 550 calories per serving. My husband LOVED it!
