Frozen Cheese Cake Bites WITH PICS!

These little babies are how I get over my cheesecake cravings!

5 Graham Cracker Planks
1 1/2 Tbs Coffee Creamer (I used Baileys Irish Cream Creamer)
1/2 container Fat Free Cool Whip
1/2 block Fat Free Cream Cheese
1tsp Vanilla Extract
Mini Muffin/Cupcake Liners

Turn your graham crackers into crumbs with a food processor and then add 1/2 tbs Coffee creamer. Use food processor to blend together. Should be wet enough to push down and keep its form.

Spoon approx 1 tsp crushed graham crackers into muffin liners and press down to flatten (I used a medication cup)-I had left over crumbs (no clue what to do with them yet)

Blend remaining ingredients together it will take on a kind of melted ice cream form (I had a pic of this but photobucket isn't wanting it to load!)

Spoon about a tbs of the "cheesecake" mixture onto flattened graham crackers

FREEZE Until Firm & ENJOY

Makes Approx 10-12 Mini Cheese Cake Bites and are about 72 cals a piece!

    These look yummy! So they can be stored in the freezer too? Or just to set them? Are they the same cheesecakey consistency if you leave them in the freezer for days?

    They are about 72 Calories per piece. I leave them in the freezer, and either eat them frozen or let them sit out for 5-10 min, any longer and I think they'd get to melty.

  • I am going to try these tonite! What I like about it is that the servings are small and you can take just one but with a whole pie you tend to cut large peices and eat more than you should. I love this idea, Thank you so much for posting it!

    Seriously, when I read this and looked at the pics, my mouth filled with saliva.... Pavlov's Dog, you got nothin' on me, lol!

    Love the alternate version too with the choco grahams and peanut butter added!

    Wonder how they'd be with Cinnamon grahams and a little layer of fruit jam added?

    Yum!! Hey, and what to do with those extra graham crackers is this:

    Mix 1/2 cup canned pumpkin (not pumpkin pie mix) with 1 tbsp (or less, just sweet enough to taste) agave nectar or honey, and a couple dashes of pumpkin pie spice. Warm it in the microwave for about 30 to 45 seconds (or eat it cold if you want it, it's still good)

    Then sprinkle 2 tbsp graham cracker crumbs onto the pumpkin and top with 2-4 tbsp fat free cool whip.

    Freaking amazing and FILLING dessert or snack for 150 calories. It's super filling cuz of the fiber and could probably be used as a small meal as well.
