Healthy Blueberry Muffins (16 servings-112 Calories each)

Ingredients:
6 tablespoons of non fat, plain Greek yogurt
3/4 cup (5 1/4 ounces) sugar
1 egg and 1 egg white
2 cups Whole Wheat Pastry Flour
2 teaspoons baking powder
1/2 teaspoon salt (optional for low sodium diets)
1/2 cup milk
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 1/2 to 2 cups (about 1 pint) blueberries, either fresh or frozen, wild Maine berries preferred
1 tablespoon sugar mixed with 1/2 teaspoon cinnamon (optional)

Directions:
1. Preheat oven to 375 degrees.
2. Spray 16 regular sized muffin pans.
3. Beat the Greek yogurt and sugar together until somewhat creamy.
4. Add the egg and egg white one at a time and mix well after each addition.
5. In a separate bowl combine the whole wheat pastry flour and baking powder.
6. Add the dry ingredients to the wet ingredients and mix until thoroughly combined.
7. Stir in the milk, vanilla and almond extract just until smooth.
8. Quickly stir in the blueberries.
9. Fill the muffin cups 3/4 full (about 1/4 cup each) and use all of the batter. (Sprinkle with optional sugar now).
10. Bake the muffins for 25 to 30 minutes or until they are light brown.
11. Let cool in the pan for 10 minutes, then remove to cool on a cooling rack for another 10.
