I wanted something different last night so I made up a yummy concoction to try.
Parmesan Ranch Chicken
4 boneless, skinless chicken breasts
1/2 cup of reduced fat parmesan cheese
1 packet of Hidden Valley ranch dressing dry mix
Heat oven to 350 degrees.
Mix in shallow bowl the parmesan and ranch mix.
Wet the chicken with water (to hold the "breading" on the chicken).
Dip in mix and cover.
Place on cookie sheet.
Sprinkle extra mix to cover (as wanted).
Cook for 35-40 until chicken is fully cooked!
Enjoy!

I am shocked to see this REALLY ONLY 192 calories? I don't know about anything that says diet and RANCH combined doesn't seem like a promising diet.0

I think it helps that it is not ranch dressing. The serving size is 4 oz.0

That sounds really good. I'll have to suggest that to hubby. It sounds like it would be good chunked up and on top of a salad0

ooo wow, sounds good.... going on my grocery list for next week
I might have to make a portion with out the ranch dressing mix... and come up with something else to put in instead... We cook for my mom twice a week and she doesn't do ranch.
oo but what if I don't tell her? ... does it have a strong ranch flavor?0 -
Sweet thanks! I will be making this tonight
I've got chicken in the fridge and a ranch packet in the cabinet. May ad some red potatoes sliced up with some ranch powder as well or rosemary-garlic.0 -
