Morning Glory Muffins
These are really good, kind of taste like a moist carrot cake. And healthy! Yum!
This recipe is meant to make twelve, but it ended up making 18 for me I entered it on the database under HomeMade - Morning Glory Muffins just to make it easy for ya'll :flowerforyou: Enjoy!
INGREDIENTS
1-1/4 cups all-purpose flour
1/2 cup and 2 tablespoons sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 tbsp ground flaxseed
1-1/2 eggs
1/4 cup and 2 tablespoons applesauce
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1 cup grated carrots
1/2 medium tart apple, peeled and grated (I used half a pear as I didn't have an apple in the house)
1/2 (8 ounce) can crushed pineapple, drained
1/4 cup flaked coconut
1/4 cup chopped walnuts
DIRECTIONS
In a large bowl, combine the first six ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Mix the wet and dry ingredients together. Stir in carrots, apple, pineapple, coconut, and nuts.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
