I use sweet potaotes instead of regular white ones for mash - bake a few sweet potatoes in a microwave for 8-10 mins, scoop out the middles and mash with a drizzle of olive oil and a good grind of black pepper.0

It depends on the tortillas you use. They run anywhere from 50 to 110 cals, you can even use flat bread which is 100 cals. for a big piece. The refried beans are about 50 cals per 1/2 cup and cheese 70 cals per 1/4 cup.0

Low calorie biscuits: (Makes 11 small biscuits at 49 calories apiece)
- 1 cup whole wheat pastry flour
- 1 1/2 teaspoons sodium free baking powder
- 1/4 teaspoon baking soda
- 5 Tablespoons fat free sour cream
- 1/2 cup skim milk
1. Combine/sift flour, baking powder and baking soda.
2. Cut in the sour cream like with a pie crust.
3. Add the milk and mix just until a dough forms.
4. Drop by rounded tablespoons onto a greased cookie sheet.
5. Bake at 425 degrees for 8-11 minutes.0 -
Pancakes:
- 1 packet of instant oats (weight control or reduced sugar)
- 1/4 tsp baking powder
- 1/2 cup fat free yogurt or cottage cheese
- 2 egg whites or 1/4 cup egg beaters
- Cinnamon or vanilla extract
Combine together and let sit for 2 minutes.
Cook at you would a regular pancake, just on a higher heat and for slightly longer.

Low cal Portabella mushroom cheesesteak. (My version is only slightly modified)
1 Portabella mushroom (cut out the gills and stem)
1/2 red bellpepper (green works too)
1 jalapeno pepper
1/3 yellow onion
salt and pepper to taste
1 slice of low-cal swiss cheese.
6 button mushrooms (because I just adore mushrooms in general)
1/2 tsp. worcheshire sauce (I can't spell it so whatever.. you know what I mean)
[The real recipe calls for 1/4 teaspoon of low-sodium soy sauce, but sometimes I don't even bother mixing it in.
Slice up portabella caps and heat over medium heat for about four minutes. Set aside. Chop veggies as finely as possible. Cook veggies over same heat while throwing in your favorite seasoning (Mines are usually a bit of garlic powder, cayenne pepper, black pepper, minced garlic, and parsley). Meanwhile, I slip a wheat hoagie into the oven to toast it. While veggies cook, I melt the swiss cheese on top, and once melted, I return the portabella slices to the mix. Stir on medium-low heat then add to toasted hoagie. I hate veggies normally, so this helps me get my daily fill of them.0 -
