Lite Chicken Salad Recipe, Please?
Hi Everyone! New to FitnessPal, and can't wait to get started! Am looking for a good chicken salad recipe--the kind that you can eat in a sandwich (like tunafish salad sandwich). I looked online but got pasta salads, bowl salads, but I want a sandwich recipe! Thanks!!

I use plain greek yogurt in place of mayo. So shredded chicken, about 1/4 C greek yogurt with some roasted chopped walnuts and red grapes cut in quarters. It is pretty darn delicious! I just put it in a whole wheat pita pocket with basil or a lettuce leaf!0

Yield: 2 servings (serving size: about 1 cup)
Ingredients
1/4 cup low-fat mayonnaise
1 teaspoon curry powder
2 teaspoons water
1 cup chopped skinless, boneless Grilled Lemon-Herb Chicken (about 4 ounces)
3/4 cup chopped Braeburn apple (about 1 small)
1/3 cup diced celery
3 tablespoons raisins
1/8 teaspoon salt
Preparation
Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the Grilled Lemon-Herb Chicken, chopped apple, celery, raisins, and salt; stir mixture well to combine. Cover and chill.

CHICKEN WALDORF SALAD WITH EQUAL
52% calorie reduction from traditional recipe.
2 cups cubed or shredded cooked chicken breast
2 cups chopped cored Red Delicious apples
1 cup sliced celery
2/3 cup halved seedless grapes
1/4 cup chopped toasted pecans
1/2 cup fat-free mayonnaise
1/2 cup fat-free sour cream
3 to 4 teaspoons lemon juice
2 teaspoons Dijon-style mustard
1/3 cup Equal® Spoonful*
Salt and pepper, to taste
Red leaf lettuce
Chopped pecans (optional)
Combine chicken, apples, celery, grapes and 1/4 cup pecans in bowl. Blend mayonnaise, sour cream, lemon juice, mustard and Equal®; stir into chicken mixture. Season to taste with salt and pepper.
Spoon salad onto lettuce-lined plates: sprinkle with additional chopped pecans, if desired.1 -

I don't follow a recipe but I like to use about 1- 1 1/2 cups chopped chicken breast, 1/2 cup plain Greek yogurt, 1/4 cup light Hellman's mayo, 1 teaspoon Dijon, dash of onion powder, salt and pepper to taste.
Sometimes I add some of the following: halved red grapes, slivered almonds or chopped pecans, diced fresh tomato, chopped celery, chopped green or red apples. (Be creative!)0
