Coconut curry steamed mussels

Coconut-curry steamed mussels
serves 4, serve w/ brown rice or quinoa
2 pounds mussels
2 tsp virgin olve oil
1/2 cup chopped onions
2 garlic cloves, minced
2 tsp grated ginger
1/2 tbsp curry powder
1/2 tsp garam masala
1/2 cup lite coconut milk
2 tbsp chopped cilantro (i use leongrass or parsley)
clean mussels. in deep pot heat oil, suate onion, garlic and ginger 3 minutes. add curry & garam masala, cook 30 seconds, add 1/2 cup water, simmer 1 minute. add mussels, increase heat to medium, cover pan and simmer 4-5 minutes until mussels open. transfer mussels to serving bowl. reduce broth by simmering another 4 minutes, stir in coconut milk and cook for 2 more min. stir in cliantro and pour over mussels.
(this was based off Jillian Michaels' master your metabolism recipe)

according to the cookbook (she used regular coconut milk, i use the low-fat coconut milk):
calories: 232 cal
12.2g fat
20g protien
10.3 carbs
466 mg sodium
this is before the rice or quinoa i think.0 -

bump! Don't do the seafood, but I'd love to modify the coconut curry for another dish.
Who am I kidding, I could just eat (drink?) coconut curry by itself.0 -
