Heres a healthy Cake recipe and pretty low cal

Healthy family cake recipe 
Heres a great recipe for a healthy cake that my family loves...
I use it for lunch boxes and nutritious snack. It's only 125 cals a small slice.
Makes 24 small slice, or 12 large slices @ 250 cals.
You could probably make is lower cal by changing the oil. But I like olive oil, i think its good for the skin...
ingredients:
7 oz self raising flour,
pinch salt,
1 tsp ground spice( or some cinnamon and nutmeg),
6oz soft brown sugar,
4 eggs,
10 tbs olive oil,
9 oz grated carrots,
2 bananas,
2 oz chopped nuts ( I use walnuts).
How to do:
Stir flour, salt suger and spices together.
Stir in eggs and oil,
Add the carrots ( I stick them in the blender and just finely chop them) & nuts, & chopped into small pieces the bananas.
Mix all together ( don't over mix )
Stick in about a 7-8 " round tin and bake 180 degrees for aprox 45 min. Until golden and firm to touch.
Take out and let cool for a bit in pan and then turn out onto wire rack.

For those who don't have self-rising flour like me, the substitute for 1 cup, is to take 1 cup all-purpose flour and add 1-1/2 teaspoons baking powder and 1/2 teaspoon salt.
Can't wait to try this!0
