Cheesy Bacon Potato Soup!!! Delish :)

Potato-Bacon Soup
3 slices turkey bacon (uncooked), cut into 1/2 inch pieces
1/2 medium chopped onion
4 cups frozen Southern-style has brown potatoes (such as Ore-Ida)
2 cups fat-free, less sodium chicken broth
1/4 tsp. salt
1/8 tsp. pepper
1 cup skim milk
2 TBSP. chopped green onions
1/2 cup (2 ounces) reduced-fat shredded extra-sharp Cheddar cheese
1. Cook bacon in a large saucepan over medium heat 2 minutes, stirring frequently; add onion. Cook, stirring frequently, 5 minutes or until bacon is crisp.
2. Add potatoes to bacon mixture, stirring to coat with bacon drippings. Add broth, salt, and pepper, cover and bring to a boil over high heat for 6 minutes, stirring frequently.
Mash potatoes with a potato masher until soup is slightly thick. Stir in milk. Cook, stirring constantly, 1 minute or until thoroughly heated; remove from heat. Mix in ½ cup Cheese. Ladle soup into bowls; sprinkle evenly with green onions (optional—1/8 cup cheese—makes calories 260) Makes about 3 servings (1 cup).

I don't but thats just because I dont keep up with sodium, if you enter it into the nutrition recipe calculator it will show you the info for everything that you track daily...0 -
