1 minute flax muffins
Going to try these tomorrow in the AM!

1/4 cup flax meal
1/2 tsp baking powder
1 tsp sugar
1 tsp cinnamon
1 egg
1-1/2 tsp oil
Mix and microwave for 1 minute. We used a silicon large muffin cup. This was just like a muffin!

I love these. I add in a Tbls or two of cocoa powder and a little bit of torani sugar free chocolate syrup. Yummy chocolate muffin.0

OMG! I was so intrigued I had to go make one right away... they are AMAZING! Works like a charm and soooo yummy... a bit more like french toast than a muffin... but a very nice hybrid!

I make this for Atkins breakfast, but I substitute Splenda for sugar, and butter for the oil. Really good topped with a little cream cheese!0

LOVE the one minute muffin. In fact I have flax in my fridge just for this recipe. :bigsmile:
There are many variations on this including battering it with egg and making french toast out of them. SO good. And I second the cream cheese. I always sweetened my cream cheese though. And added vanilla. You can add some softened carrots and some spice cake seasoning to make a carrot cake with it. Ive also added cocoa powder to it and made a chocolate muffin. Possibilities are endless. :happy:0 -
I think that this is my new favorite thing!!!! I had one after dinner last night and I had one for breakfast this morning! It kept me full for a really long time.0

Amber glad you like these - but be sure to put your flax in the fridge or freezzer as it goes rancid quickly And also while there is np such thing as too much flax (like it being bad for you) it can cause some side effects like bloating and gas. Chia seeds/meal is also another option you could use, without the side effects. I haven't tried it since I can't get it where I live.

BTW according to MFP this has 260 cal per muffin if you use sugar +whole egg, but if you use sugar sub + whole egg it has 253, but if you use egg whites + sugar sub it has 214. And if you leave out the oil, use low fat Greek yoghurt instead it has 158cal per muffin .... just thought you wanna know!0

Try it using 2 tablespoons of pumpkin instead of the other options of yogurt/oil/butter, and of course, add pumpkin pie spice and cinnamon. Yum!0 -
