Garlic Parmesan Chicken with roasted veggies
I got this recipe from fitness magazine. It is really good and very easy!
Need:
1- 3 oz chicken boneless skinless chicken breast, thawed
2 garlic cloves, minced
3 tsp. olive oil, divided
2 tbsp. grated parmesan cheese
3 cup chopped veggies (broccoli, potato, bell pepper is what i use)
Preheat oven to 400. Mix together garlic, cheese, and 1 tsp oil. Pat garlic cheese mixture onto chicken and place on baking sheet. Toss veggies with 2 tsp oil salt and pepper and place on baking sheet with chicken. Cook for 20 mins. or until chicken is done.

Sounds Yummy! Did Fitness magazine say anything about the calories, fat etc?0

Also SparkPeople.com has a nutrition calculater as well....just do a search for it here under recipes and you'll find it right off. It's been shared many times. It's very handy when you don't have nutrition info on items.
though I prefer to share recipes that already have the info so folks (and me..lol) don't have to look it all up and calculate it.:drinker:

Hey, I just wanted to say how GREAT this recipe is! Thanks for sharing it with us. I made it for 4 and redid the amounts a litte so overall it has less fat and calories. Here is the way I made it for anyone interested:
12 oz chicken breast (I had 2 6 oz breast and cut them in half)
2 tbsp olive oil, divided
7 tbs grated parmesan cheese
5 cloves garlic
1 bunch of broccoli, cut into cmall spears
2 c small brussel sprouts (halve them if on the larger side)
1 sweet potato, peeled and cubed
Follow directions above
Nutrition facts:
294.3 calories, 11.2 g fat, 3 g sat, 6 grams monounsat, 56.2 mg cholesterol, 275.1 mg sodium, 972.6 g potassium, 21.4 g carbs, 7.3 g fiber, 1 g sugar, 30.1 g protein0 -

I use sparkrecipes.com. I really like the site, although I have heard some people on here say this site has more steps involved than some of the other ones. To me, this is the easist one I have come across.0
