Homemade Mac & Cheese!

I'm looking for a Homemade Mac & Cheese Recipe (without the added fat & calories, of course!) to make for dinner tonight!

Anybody have one they are willing to share?

    take whatever pasta you have, I prefer whole-wheat pasta.... elbows if you want traditional, mix it up if not...
    what cheese is in your fridge? I have cheddar, shred it.
    Drain as usual once cooked thoroughly and add the cheese while pasta is still hot (ie don't rinse in cold water) it will mostly melt itself if the pasta is hot enough and its shredded fine enough. If not make sure your mixing it in an oven safe dish and toss it in the oven to melt the cheese.

    I've never thought of using laughing cow cheese in mac n cheese.... that does sound delicious tho! I might have to try that... any particular flavor of laughing cow?

    I like the garlic and herb flavor! But I think any one would really work depending on what you like. Give a few a try and see what you like!!!

    When you make the home-made it makes me wonder where the sodium comes from in the boxed mac n cheese... in the cheese powder they give? all my pasta appears to be 0 sodium, and there's of course some in my cheese but my sodium count is much healthier eating the home-made variety...

    Whatever recipe you choose sub the pasta for whole grain, add diced green peppers, diced onion and diced (cooked) chicken. That way you're eating more chicken, veggies and whole grain in your portion than the unhealthy stuffs.

    Ingredients:
    3 cups pasta, cooked (I use whole wheat pasta)
    2 cups cheddar cheese, low fat, shredded
    1 cup cottage cheese, non-fat
    3/4 cup sour cream, non-fat
    1/2 cup skim milk
    2 tbsp onion, grated
    1/2 tspn salt
    1/2 tspn pepper
    1 egg, beaten
    1/4 cup breadcrumbs
    Directions
    Mix together all ingredients except breadcrumbs. Pour into cassarole dish, sprinkle with breadcrumbs and bake at 350 for roughly 30 minutes.

    I use laughing cow light swiss & also add Green Giant Cauliflower and Cheese Sauce to add my veggies...still low in calories and YUMMY!
