Easy Thai Chicken



Peanut Sauce:

4T peanut butter

2T soy sauce

...
2t honey or brown sugar

1/4t red chili flakes (or more if you like it spicy, or none)

1-3T water

Mix all the ingredients above in a small bowl... you may have to microwave it for 10 sec or so to soften the PB. Add more water to make it easier have a thick gravy consistency.



4 pcs chicken breasts--cut into cubes

1t ground ginger (or about 1" fresh ginger, grated or 1tsp powdered ginger)

2T EVOO or canola oil

4 green onions, sliced (a handful) (opt)



Saute chicken with ginger in EVOO until chicken is cooked. (if there is too muc water in the chicken--usually if you use the flash frozen chix, just drain it) Add peanut sauce. stir till thorougly heated. Throw in the green onions. Serve over white or brown rice.


I subbed PB2 for reg peanut butter and with that subbed the cals come to 142, Carbs 5, fat 6, protein 17, fiber 1 chol 40 and this is based on 6 servings.

    I cheat...I use House of Tsang Thai Peanut Sauce on cubed chicken or shrimp. There are other Thai Peanut sauces out there, but the House of Tsang tastes the best to me...spicy but not overly sweet.

    Wow, it tastes like it's so complicated to make, but it's so easy! I added extra spice because my boyfriend loves spicy food and he loved it. Thanks so much for sharing! I love peanut chicken and this is a tasty, easy way to prepare it. I'll be adding this to my usual repertoire of recipes!

    Made this for my hubbie and I last night and we both loved it. I added veggies and was out of soy sauce so used worcestershire sauce instead.
