What to do with green peppers?

I have been looking for a stuffed green pepper recipe, but all I seem to find is that one with the beef & rice that has been around forever. I was just wanted to jazz it up a bit.

Anybody have any other ideas ??

    i've seen people put tofu in them!

    and i mean, i'm really boring, but i just eat green peppers like apples :P

    OK, not quite using it as the main ingredient ... but ...

    Fajitas :) ... Get some onions, some chicken, and make some fajitas with lots of grilled (or pan seared) peppers! :)

    Well, I loathe green peppers, but I love to cook and try interesting recipes. I replace green peppers with either red bell peppers or poblano peppers, which might change things up for you. Also, regarding fillings, you might google "Italian Stuffed Peppers" or "Vegetarian Stuffed Peppers". Tons of recipes out there. On a 2 minute google search I even found one with turkey and quinoa!     I know it sounds like you just want to stuff them , but what about putting them on the grill or oven racks then pull themout let them sweat in a plastic bag for about 10 minutes . Then slice them up put some oil on them and season them for taste . Or put turkey sauge in them with some low fat cheese.

    The last I made was with rice and skinned chicken breasts cut up and cooked for a while in Buffalo sauce.
    Did cover with cheese and bleu cheese dressing.

    You can put anything in them really. Try replacing the rice with quinoa & using green onions and mushrooms. Top with a bit of tereyaki (sp) sauce for a different flavor

    Yummy! You can boil some potatoes then raost them with cauliflower,broccoli carrots and turnips. Spray with non fat cooking spray and sprinkle on your favorite seasonings. Put a head of garlic ,a vidalia onion in some foil with cooking spray and some fresh herbs or perfect pinch seasonings. When the veggies are fork tender mash together with the carlic and onion.(Just squeeze the garlic out of the head) Season to taste ands stuff into the peppers. Bake at 350 for 1/2 hr or until the peppers are tender. You can top with tomatoe sauce or something but I think that is disgusting!!! Lol

    This sounds bizarre, but TRUST ME:

    Green Pepper Sushi Roll with Peanut Butter

    2 green peppers, sliced thin
    3/4 cups sushi rice
    3 tbsp. peanut butter
    2 slices bacon
    seaweed
    2 tbsp. oil
    1 tbsp. soy sauce
    1 tsp. sugar
    1 tbsp. vinegar
    pinch salt & pepper

    1. Sauce: Whisk peanut butter, oil, soy, sugar and vinegar together in a bowl. Set aside.
    2. Fry bacon in a pan w/salt & pepper to taste.
    3. In a separate pan, stir-fry the green pepper til wilted.
    4. Add sauce. Stir til incorporated.
    5. Put sauced green pepper and bacon into the seaweed with some rice.
    6. Fold like a little taco and enjoy!

    I'm vegetarian, my mom makes stuffed green peppers with meatless taco beef, it adds more spice. So it's the vegetarian meat, tomatoes, rice and sometimes she adds other vegetables like grated carrots. It's my second favorite food! So good. =)

    "Momma's Peppers . . . Whenever my mother prepares this Stuffed Bell Pepper dish, everyone in the family finds an excuse to 'drop by' for a visit to my parents' home. Being a fourth generation native New Orleanian, my mother offers a plate of food to anyone who stops by for a visit . . . that's why this recipe makes twelve servings!"
    Ingredients:
    1 tablespoon olive oil
    1 small onion, finely chopped
    1 stalk celery, chopped
    1 small green bell pepper, chopped
    1 clove garlic, minced
    1 tablespoon chopped fresh parsley
    1 teaspoon Creole seasoning
    1 teaspoon file powder

    salt and ground black pepper to taste
    1 1/2 pounds ground beef
    3/4 pound cooked ham, finely chopped
    1 pound baby shrimp
    1 (16 ounce) package unseasoned dry
    bread stuffing mix
    6 large green bell peppers, halved and
    seeded
    1 cup plain bread crumbs
    Directions:
    1. Preheat oven to 325 degrees F (165 degrees C).
    2. Heat oil in a large pot over low heat. Saute onion, celery and chopped green pepper for 5 minutes. Stir in garlic, and saute for 2 minutes. Season with parsley, Creole seasoning, file powder, salt and pepper. Increase heat to medium high, and add ground beef. Cook until beef is evenly browned. Stir in ham, and cook for 5 minutes. Add shrimp, and cook for 2 minutes. Remove from heat, and stir in stuffing mix.
    3. Stuff each bell pepper half, and lightly sprinkle with breadcrumbs. Place stuffed bell pepper halves in ungreased baking dish. Bake in preheated oven for 1 hour.

    6 cloves garlic, minced

    1 (16 ounce) jar chunky pasta sauce
    1/2 cup chopped onion
    1 (6 ounce) package tomato lentil
    couscous mix
    8 ounces shredded sharp Cheddar
    cheese
    Directions:
    1. Preheat oven to 375 degrees F (190 degrees C).
    2. Cut peppers in half, place them in a 9x13 inch baking dish, and set aside. In a large skillet over medium heat, saute the ground beef for 5 minutes. Add 1 1/2 cups chopped onion, chopped green bell pepper, and garlic. Reduce heat to low, add tomato sauce, and let simmer while preparing the couscous.
    3. Prepare couscous according to package directions, but add the remaining onion to the water before adding the couscous. When couscous is done, combine it with the sauce. Fill bell peppers with the mixture. Top each with shredded cheese.
    4. Bake at 375 degrees F (190 degrees C) for 20 minutes, or until cheese is bubbly and slightly brown on top.

    beans and rice either fat free refried beans or black beans... and enchilada sauce! you can add shredded zucchini or chicken or turkey with taco seasoning.....

    I eat them "as is" as well.... hull out the seeds wash and enjoy!
