High Protein Pancakes (I found this on MFP a while back so someone out there deserves the credit)
1 cup Oatmeal
1/2 cup Egg Beaters - Egg Whites
1/2 cup Fat Free Cottage Cheese
1/2 tsp. Ground Cinnamon, 0.5 tsp
1/2 tsp. Vanilla extract
Makes 2 servings
1 serving = 150 cal / 16g protein / 18 carbs / 2g fat / 210 sodium
Add blueberries and top with lite maple syrup. You'll want to make them every weekend!

Everything I make with cottage cheese was already posted in the Oats challenge months ago... But I'm going to repost a few for those looking for recipe ideas.
Protein Brownies (adapted from oats challenge)
For 6 brownies, approx 140 calories each, 16-18g protein.
Line the bottom of a 9x5 loaf pan with parchment paper. Preheat oven to 325F.
In a medium sized food processor bowl combine the following:
1 cup rolled oats (old-fashioned)
1/2 cup 1% cottage cheese
1/2 cup liquid egg whites (= 4 whites if you prefer)
2 scoops whey isolate protein, chocolate (i use 82grams, which is 2 huge scoops)
1/2 tsp each baking powder and vanilla
2 Tbsp unsweetened cocoa powder
2/3-1 cup unsweetened applesauce (depending on how much protein powder you use)
**You can add 1/4 cup artificial or natural sweetener or some kind if you like, as well. The recipe calls for it but I find that I like mine just like this.
Process it until it makes a smooth batter. Pour it into the loaf pan and cover with foil. Bake for 25 mins. Remove foil and bake an additional 13-15 mins or so, but keep an eye on it. Remove from the oven once it sets fully but be careful not to overcook, or the egg whites will get sponge-y and the brownies will dry out. Let it sit for 15 mins in the pan until it starts to pull away from the sides and then lift them out using the parchment. Let cool on the counter and then cut into 6. Store in the fridge - I wrap mine up in cellophane and they keep fine for a week or so.
Protein Pancakes
Toss into a small food processor, per serving:
1/4 cup egg whites (approx 2)
1/4 cup 1% cottage cheese
1/4 cup quick cooking oatmeal
Add cinnamon, vanilla, or other spices to taste. Heat a pan and fry as you would a normal pancake. Serve with warmed fruit.
150 cals per serving, 18g protein, 2g fat.
For the Challenge:
Power Salad for 1 - Some variation on this has been my lunch several times this week. I love the idea of cottage cheese for a salad dressing and the nutritional yeast and balsamic give a great flavour. Exchange the chick peas for some shredded cooked chicken if you have it handy!
2 cups shredded lettuce
1 cup shredded green cabbage
1/4 cup red onion, sliced
1/2 red bell pepper, sliced
1/2 cup cucumber slices
1/4 cup pico de gallo
1/3 cup garbanzo beans, cooked from dry
1/3 cup 1% cottage cheese
1 Tbsp nutritional yeast
1 Tbsp high quality balsamic
Layer the veggies in a bowl. Top with garbanzo beans, and cottage cheese. Sprinkle nutritional yeast over the whole lot, drizzle with balsamic, and give it a good stir. Easy!

Wow, I've never ever heard of using cottage cheese in sweet dishes. I mostly spread it on rice cakes with lots of salt and pepper/jalapeños, or with a jacket potato or sometimes instead of ricotta, it's nice with filo pastry and spinach. Sometimes I make it like a ricotta lasagne, as estimated below.
Spinach and cottage cheese lasagne.
Mix about 4 cartons of cottage Cheese, with plenty of baby leaf spinach, a handful of fresh basil, and plenty of black pepper. Spoon a layer into a small casserole dish, then layer 2 lasagne sheets on top, then another layer, then 2 more sheets then a thin later with some low fat mozzarella or any low fat cheese on top and bake as you would ordinary lasagne. 305 per serving. Afraid I can't make it as my ovens broken atm.
