Feta Cucumber Tomato Salad Deliciousness

I made this salad earlier and it turned out so good so I am sharing it with you guys.

Here is all you need:

I used 2 cucumbers and 4 tomatoes and about 1/4 of a red onion...you can increase or decrease the amounts depending on how much you want to make or what you like. This yields about 5-6 cups.

- Start by dicing the cucumbers, tomatoes and red onion
- Next take about 1/4 cup olive oil and stream it (while whisking) into 1/8 c red wine vinegar, then pour this dressing over the veggies
- Next crumble about 1/3 cup feta cheese into it
- Finally, add salt and pepper to taste and then mix everything together really well.

I found it tastes better after it sits and marinades in the fridge for a little while. I seriously cannot stop eating this it is so good!
You can eat it by itself or on baked tortilla chips or pita/tortillas

    I do pretty much the same thing, but I use fat free Italian Dressing instead of oil and vinegar. Love tomato and cucumber.

    i just came home to have some of this and it is all gone! haha, my mom said she couldnt stop eating it last night. ...looks like im off to get more cucs and tomatoes....

    BTW..I just entered the info into MFP and came up with 150 calories for 5 servings (using 1/2 fat free feta, because I love it!)

    I just made this minus one tomato and it's a TON of food! I would say a serving is probably two cups. So tasty, thanks for sharing!

    I made this tonight

    2 cucumbers
    28 grape tomatoes
    1/4 cup red onion
    8 tbls sliced black olives
    1/4 reduced fat fet (i used athenos)
    8 tbls fat free italian dressing (15 calories per serving)
    fresh basil if desired

    I put it in the recipes I split it in 4 ... 102 calories per serving ...

    VERY YUMMY will be making all the time now ... THANKS ... would also be great as a pasta salad with whole wheat pasta
