    omg! This looks waaaay good, not only can i feel good about eating it, i can bet my boyfriend to finally let me make lasagna since he LOVES zuccini!

    Try this to dry out the zucchini a bit. I do it for eggplant lasagna.

    slice the eggplant/zucchini into 1/4 inch thick slices.
    Lightly salt the slices and put in a colander to release excessmoisture for about 1/2 hour.
    Lay on paper towels to soak up any extra moisture.

    Preheat oven to 450°. Brush eggplant/zucchini lightly with olive oil on both sides and place on cookie sheets.
    Bake for 20-25 minutes, turning half way through until eggplant/zucchini is golden brown.

    Oh man this sounds so yummy! I've been craving lasagne and I have zucchini I need to use up. I'm so making this tonight but adding spinach to the ricotta and maybe throw in some ground turkey!

    i have used spinach in the ricotta as well as portobello mushrooms and it is delish!

    this recipe is great! made some adjustments like lowfat cottage chesse with the ricotta and added a half a pound of hamburger but with the adjustments still only about 280 cals for a sixth of the pan! Yummy! thanks alot for the post!

    Made this tonight - added mushrooms and a pound of lean ground beef for a total of around 280 per serving. My father-in-law had 3 helpings! A definite hit!

    adding ground beef or turkey is a good idea, especially when it doesnt really add that many more calories, ill have to try that next time!
