omg! This looks waaaay good, not only can i feel good about eating it, i can bet my boyfriend to finally let me make lasagna since he LOVES zuccini!0

Try this to dry out the zucchini a bit. I do it for eggplant lasagna.
slice the eggplant/zucchini into 1/4 inch thick slices.
Lightly salt the slices and put in a colander to release excessmoisture for about 1/2 hour.
Lay on paper towels to soak up any extra moisture.
Preheat oven to 450°. Brush eggplant/zucchini lightly with olive oil on both sides and place on cookie sheets.
Bake for 20-25 minutes, turning half way through until eggplant/zucchini is golden brown.0 -

this recipe is great! made some adjustments like lowfat cottage chesse with the ricotta and added a half a pound of hamburger but with the adjustments still only about 280 cals for a sixth of the pan! Yummy! thanks alot for the post!0

Made this tonight - added mushrooms and a pound of lean ground beef for a total of around 280 per serving. My father-in-law had 3 helpings! A definite hit!0

adding ground beef or turkey is a good idea, especially when it doesnt really add that many more calories, ill have to try that next time!0 -
