Healthy Birthday Dessert....need ideas!

A co-worker is making my birthday cake/dessert and I need to ler her know what I want. I am looking for ideas please! Must feed around 15 people. :flowerforyou:

    Mom's Brownies

    Servings: 20-Serving size: 1 piece-
    Preparation time: 20 minutes

    3 tablespoons canola oil
    1-1/2 cups all-purpose flour
    1/2 cup unsweetened cocoa powder
    1/2 cup high protein powder (no aspartame)
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    6 large egg whites (egg substitute)
    1/2 cup unsweetened applesauce
    1/2 cup date sugar Splenda,
    1-1/2 teaspoons vanilla extract
    1/4 cup walnuts (optional)

    Preheat oven to 350°. Grease an 8-inch square baking pan with 1/2 tablespoon of oil, set aside. In a medium bowl, combine flour, cocoa, protein, baking powder, baking soda, and salt. Mix well. In a large bowl, beat together egg whites, applesauce, sugar, remaining oil, and vanilla. Combine flour mixture with egg mixture until blended thoroughly (do not over mix). Add walnuts to batter, then pour into prepared pan. Bake until just set and a toothpick inserted in center comes out clean (about 20 minutes). Place pan on a wire rack and cool for 15 minutes. Cut brownies into squares and serve.

  • Sugar free jello is very low in calories.

    If you use apple sauce instead of oil and eggs, you cut the calories in half of what the box says.. that goes for cake mixes, brownies, cookies, etc.. They are gooey-er but they are wonderful!!!

    I've made the cake mix w/ greek yogurt (VERY simple and yummy). You could double the recipe and make 2 cakes, according to her website it makes 12 pieces. I've also made cupcakes using this recipe, I think it make 24 cupcakes. You could get different flavored frosting and let everyone "pick their poison". Honestly, I like the cupcakes dusted with a bit of powdered sugar or just plain. They are that good!

    There is a SUPER yummy WW recipe a friend gave me...

    Angel food cake mix
    1 can crushed pineapple
    and cool whip
    Mix Angel Food Cake mix and pineapple together and bake, Top with Cool whip...

    I think I remember it being around a 100 or so calories per slice.

    It's sweet that a co-worker is making this for you and it may be hard to ask her to make something from a specific recipe. So, what about Angel food cake (they even sell sugar-free ones), berries and fat free cool whip? It's low fat, easy to make and most people like it.

    Sugar Free Jello Poke Cake:

    Ingredients:
    - 1 box pillsbury sugar free yellow cake mix
    - 1 can diet sprite, 7-up or sierra mist
    - 2 large boxes of sugar free jello mix
    - 1 container sugar free cool whip

    Directions:
    1. Use the pop in place of the water, eggs and oil in the cake recipe. Combine and bake two round cake pans according to the box instructions.
    2. Let cool.
    3. Using a toothpick or a fork, poke a lot of random wholes throughout both cakes.
    4. Take 2 cups of boiling water and mix with the two jello boxes. Stir for 2-3 minutes.
    5. Pour the hot jello liquid over both cakes, making sure to cover all of the holes.
    6. Put in the fridge and let cool for 3 hours.
    7. Remove cakes from pan and stack on top of each other.
    8. Frost with cool whip and serve.

    My friends at work celebrated my birthday "my fitness pal style" last week, and they made Chocolate Marshmallow Madness cupcakes and Hershey Bar Haystacks. Both were Hungry Girl recipes. Chocolate Marshmallow cupcakes were so cute and tasty, and only 113 calories each. Haystacks were surprisingly scrumptious, and were only 71 cals each. They were made with Fiber One, but honestly tasted like you were eating something decadent. Just something different than the usual angel food cake!
