    My favorite is already posted by Brownspicegirl - Quinoa with Toasted Almonds and Cranberries. This is a great breakfast or snack, good warm cold or room temperature. I get the Quinoa from Costco.

    Another favorite and shock - my family loves it too is Turkey and Quinoa Meatloaf. Lots of flavor and a bit of spice. You can cut brown sugar or some Worcestershire sauce to make it more healthy. Link below:

    Just had some for lunch today. Cooked with a bit of chicken stock. Added some chicken breast and sprinkled with moroccan seasoning. Delish :) (And BS healthy!)

    Roasted Garlic Quinoa Salad

    Ingredients

    2 heads of garlic

    2 T olive oil

    ½ tsp crushed red pepper

    1 cup quinoa, rinsed

    2/3 cup spinach leaves, chopped

    1 large tomato, seeded and chopped

    ½ cup goat cheese

    2 T shaved fresh Parmesan

    ½ cup balsamic vinegar

    1T Dijon mustard

    4 cloves of garlic, minced

    1/3 cup olive oil

    Freshly ground salt and pepper to taste

    Preheat the oven to 350 degrees. Remove the papery part of the garlic and cut top off the head. Break into separate cloves. Toss with olive oil and wrap in foil. Bake for one hour. Cool and squeeze out garlic pulp. Bring two cups of water to a boil. Add quinoa and crushed red pepper. Boil for 10 minutes. Drain in a fine metal colander. Bring fresh water to a boil. Place quinoa in the colander over the water and cover with a clean dish towel and lid. Steam for 10 minutes. Remove from heat and cool. While quinoa is cooking, combine spinach, tomato, goat cheese and parmesan in a large bowl. Toss gently. Make dressing by combining vinegar, mustard, garlic and roasted garlic in a bowl. Add in olive oil in a fine stream. When quinoa is completely cooled, add to the spinach and cheese mixture. Add dressing and toss.

    I use it just like rice. I also do a cold salad recipe. Mix your cooked quinoa with lime juice, feta cheese, sundried tomatoes, black olives and some basil or thyme, add a little salt and pepper and voila!:bigsmile: I like lots of lime in mine. If you go to peertrainer,there are other recipes also. Good luck!

    I just substitute quinoa for the orzo.

    I also use it as a base for tabbouleh instead of bulgur wheat.

    Quinoa is ridiculously expensive here in Moscow but I bought a pack anyway after reading a similar thread here on MFP. Needlees to say, it has been sitting on the shelf for some time now. Thanks for jogging my memory!

    Soak with chick stock then scramble fry with egg whites oil and veg....taste just like chinese fried rice. Yummy
