Mini egg frittata!!

I was wondering I found thesehttp://www.mccormick.com/Recipes/Breakfast-Brunch/Bacon-Cheddar-and-Tomato-Mini-Frittatas. I was wanting to make them and store them in the fridge for snacks. I was wondering if anyone on here does this and how long will they keep in the fridge. Thanks

    I have not done this recipe, but I made something similar for breakfast in the microwave. I will share it in case you find it useful. You can eat it as an egg sandwich on bread, or make it more like the fritata in your recipe link. It only takes a minute or two to cook, so that perhaps instead of making them in advance and worrying about how long they keep, you could just make them as you desire them? Use a microwave safe bowl that is about the size and shape of what you want. Add the ingredients and stir. Microwave on high about 1-2 mins. Maybe less if you use a really small bowl like those glass bowls that people on cooking shows use to hold the amounts of spices or chopped onions for a recipe.

    I have done a pretty close recipe. I don't use the seasoning, and add more bps elegies and little bit of meat. I bake them in a silicon muffin pan (comes out much easier).

    They will last in the fridge for about 3 days, however, I freeze them and microwave in the morning for about 1,5 minutes.

    I've kept them over a week, but I used egg beaters or liquid egg whites. They are a staple of South Beach Phase 1.
