Mini quiches

I'm not entirely sure on the calories but these are low cal. I'd say about 50 cal per quiche. Perfect for a picnic. If you have two muffin trays, it will be easier, this recipe makes quite a lot, so you can do all the steps at the same time with both trays and put them in the oven at the same time.
Ingredients: 2 egg yolks, 2 rashers bacon, 25g cheese, cherry tomatoes, mushrooms, peppers
1. Preheat the oven to 180c.
2. Get out a muffin tray and grease with frylight or any other low calorie spray.
3. Mix the two egg yolks together into a bowl until completely mixed.
4. With the grated cheese, divide into each muffin circle until the cheese has gone. Divide the bits of bacon into the circles til gone, same with the cut up pieces of mushroom, peppers and cherry tomatoes. With the cherry tomatoes, I cut them in half and put only one half in each circle.
5. Then it is time to add the egg yolk. With a tablespoon, pour it over the muffin circles with the ingredients until about half way up.
6. Now it is time to put them in the oven for about 15 minutes. Be sure to keep an eye on them.
7. When the time is up, they should easily pop out. Bon appetit.
