Fudgy Dark Chocolate Avocado Cookies

Delicious, rich, decadent, and oozing dark chocolate. And guess what? With zero butter!

Serves: 18

Ingredients
1 ripe avocado, finely mashed
¼ cup white sugar
¼ cup brown sugar
1 egg
1 tsp vanilla extract
½ cup unsweetened cocoa powder
⅓ cup flour
½ tsp baking soda
2 oz dark chocolate, coarsely chopped

Instructions
Preheat oven to 350 degrees.
Combine the finely mashed avocado, white sugar, brown sugar, egg, and vanilla extract in a medium-sized bowl.
In a separate bowl, whisk together the cocoa powder, flour, and baking soda.
Mix together the wet and dry ingredients until just combined.
Gently stir in the dark chocolate chunks.
Using a small ice cream scoop or spoon, add one heaping tablespoon of dough on to a baking sheet lined with parchment paper.
Bake for 8-10 minutes or until the top has set. Don't over-bake!

    65 calories a cookie - not too bad calorie wise. And I love them. They have a soft cake like texture.

    Couldnt think of anything less appetising.

    Why no butter? Cakes are not supposed to be low-calorie/fat.

    will try to substitute wheat flour for another type ( issues with gluten) and give it a try

    WOW! You had me at DARK CHOCOLATE! Will have to try this one. However, I might substitute honey for all of the sugar.

    All that extra moisture is gonna screw up the texture of your cookie.

    I made these but substituted the chocolate chips of chopped pecan nuts. Only because I didn't have the chocolate to throw in. They were amazing, so rich, chocolatly and moist. Worth a good go!!

    My version:

    1 ripe avocado, finely mashed
    1/8 cup of maple syrup or honey
    1 egg
    1 tsp vanilla extract
    ½ cup unsweetened cocoa powder
    ⅓ ground oats
    ½ tsp baking soda
    2 oz dark chocolate, coarsely chopped

    Reduces the sugar content and subs ground oats for flour. The best way to make "oat flour" is in a coffee grinder. Works very well.

    I made them once for a vegan friend of mine and substituted the egg with chia and they came out great.

    Because not everyone uses MFP for the same reason and some people on here like to find low calorie cookie recipes! :lol:

    There are some good full fat/calorie/etc recipes on here too though, check this one out if you're looking for a buttery chocolate cookie that might not disappoint you.
