Okay, I thought the same but it is LUSH! Apparently it's a common dish in Tenerife, I've been to the Canaries but never Tenerife so maybe that's why I've never heard of it until now?! I have quite an acquired taste, this is definitely not for everyone, but if you like your savoury and sweet, give it ago!
I've included the calories & fat ect.. happy eating

2 Eggs
¼ Tea spoon sugar
1 ripe Banana
4 sprays low cal spray

• Beat eggs, and sugar
• Thinly slice banana; carefully mix with eggs.
• Pour in egg mixture into frying pan reduce heat.
• Once edges start to cook hold a dinner plate over the top of the pan and flip omelette onto the plate
• Slide the omelette off the plate back into the pan (cooked, brown side will be up).
• Continue cooking until bottom is brown.
• Slide out of pan onto serving plate.
• DO NOT FOLD 
Per omelette
Cals: 278 Fat: 5g Protein: 7g Carbs: 30g Sugar: 21g
(17g of sugar intake is from the banana)

Growing up I would put banana slices in my mom's Puerto Rican yellow beans and rice when we were out of ripe yellow plaintains. Kinda like the same sweet / savory concept. The eggs are an interesting component here.

if you mash the banana instead of cutting it into thin slices, mix it well with the eggs and add a little baking powder, you get sweet Banana Pancakes

I agree, this is pretty much unmashed two-ingredient banana pancakes. Nothing wrong with that though, banana pancakes are delicious!

I love the savory/sweet combo, but I dunno about this. Will definitely give it a try though!

2 eggs, 1 mashed banana, a dash of cinnamon, vanilla, 1/2 tsp of baking soda. Bake @ 350. Makes superexcellent muffins, pankakes or even banana bread. You can add protein powder if you like.....

I have tried the version where you mash a banana, mix with 2 eggs, dash of cinnamon and cook in the pan like a regular omlette. really really tasty !
  • hmm this sounds pretty good actually. Bananas taste a lot like avocados and I put avocados in my egg sandwiches
I'm not going to add sugar though haha
