Share your hidden veggie recipes
My son HATES veggies and will pick them out of everything I cook. I have been thinking for the last week or so that I wanted to start using my food processor so he will have no idea that he is getting his veggies. Does anyone use this on their kids or yourself? Recipes to share?
How about the Deceptively Delicious cookbook?

try veggie fingers and burgers, they have hidden veg inside, but most kids like them and they tend to be lower in fat than the meat/fish alternatives.0

I do that too!! Meatloaf and spaghetti are really easy ways to hide veggies.0

I alway serve some raw veggies with ranch dressing to my 4 year old and he LOVES it.. he loves to dip anything in anything (and I mean anything..lol) so maybe some sauces, and he really loves to help, so that is also an angle.
As for hiding stuff, mashed cauliflower instead of potatos, carrots in meatloaf, lasagne with spinach and anything else you want to throw in there, oven fried green beans, cheese always seems to help also.0 -
The book "deceptively delicious" AMAZING! She puts veggies in every recipe and you would never know!0

Eating cooked veggies was a bad experience for me for as long as I can remember. For example, cooked carrots are just nasty. I would think "Why does it need to be cooked at all?!?!"
However, recently, I've found recipes that are absolutely fabulous. This past Easter, my wife made cook carrots and I loved them. They were so good that I went back for seconds; and tried going back for thirds but they were gone!
Wish I could remember the exact recipe, but it involved regular carrots, butter, brown sugar and a pot of water.
The point is that there are "secret recipes" for foods that I could not stand eating before; which I'm discovering a love.

Wonder if kids will drink that new V8 line of drinks that supposedly taste like fruit. Has anyone tried them? Would it be a good source of daily veggies?0

Muffins are an awesome way to hide veggies, you can make them with zucchihi, squash, sweet potatoes, carrots, pumpkin. I have also made brownies with zucchini and have heard there is a recipe out there for brownies with black beans..never tried it but heard it's good.0

My son drinks V8 splash like crazy. They are actaully really good! However, the V8 Splash isn't as much juice as the other brands.0 -
The V8 Splash Juices are great. Just not sure on the sugar content. But do taste great and you get your veggies/ fruits in.0

grind up any veggie and call it a dip- serve with low cal crackers, celery, carrots and cukes . Red and green peppers are especially good like this.0

I'm lucky in that my kids enjoy veggies... but they do love that drink. My hubby loves it too and he isn't a veggie fan. I like to puree carrots and add them to my homemade spaghetti sauce instead of sugar. It makes it sweet without adding actual sgar... and it tastes delicious.0 -

When my boys were little, I would sneak veggies into EVERYTHING... I'd blend mushrooms, carrots & onion & mix them into burgers... I'd do the same with homemade chicken noodle soup, blending up potato, onion, carrot, celery, etc, then pouring right back into the soup!! They never knew it was there, but ate it like it was going out of sight! (Egg rolls were another... with the blender as my bff!)
Now, my kiddos don't have any issues with veggies... but I JUST tried a recipe (I'll look for it) that I found on Runner's World website for Cauliflower Mac & Cheese. It sounded kind of weird, but it is absolutely amazing!! It's the same idea... cooked & puree'd (sp?) cauliflower, mixed in with your elbow macaroni, cheeses, chicken broth, etc. GREAT recipe! I'll post it when I can find it!
