Raspberries With Cheesecake Topping
Raspberries With Cheesecake Topping
This creamy no-bake version is simple to prepare. The berries make it rich in fiber.
Makes 2 servings
Ingredients:
2 oz. fat-free cream cheese
1/4 cup low-fat ricotta cheese
4 tsp sugar
1/4 tsp orange peel
2 tsp orange juice
1 1/2 cups raspberries
2 gingersnap cookies
In a medium mixing bowl, combine cream cheese, ricotta cheese, sugar, orange peel and orange juice. Beat with an electric mixer on medium speed until smooth. Cover and chill for at least 4 hours or up to 24 hours.
To serve, spoon the fruit into dessert dishes. Top with the cream cheese mixture and sprinkle with the broken cookies.

Bump-this is brilliant and a light bulb just went off. Instead of having cheesecake as the main item with fruit as a topping, have the fruit as the main item with the cheesecake as the topping. I'll have to adopt this concept for other things too. Thanks.0
