Vegetarian/vegan recipes?
Just curious if anyone has any meatless recipes that I might be able to steal? I don't eat any dairy unless it's in something (I don't eat fried eggs, drink cereal milk, yogurt, etc. but if something calls for any of it mixed into something for whatever reason, I'll eat it).

I'm not a vegetarian, but my daughter goes through vegetarian periods. Figuring there are considerably worse things than eating lots of veggies and whole foods, I shamelessly indulge this.
Quinoa Black Bean Salad -- This is a family favorite, even among the carnivores
We add a green pepper to this, and do not use cil****o, as that crap tastes like you doused your meal in dishwashing liquid. Evil stuff... *shudder*

I recently started making Caramelized Onion Enchiladas with Salsa Verde. They are so addictive and very low in calories. My meat-eating husband and children absolutely love them, as well. I make them every week. And because I hate chopping onions, I do a double-batch of onions and freeze half so I only have to do it half the time. Using my specific ingredients, each enchilada has 136 calories. I promise you will not be disappointed. They are THAT good.
2 pkg Santa Fe Tortilla Co fajita-sized flour tortillas
1 large jar Archer Farms salsa verde (this is the Target store brand)
1 pkg (2 C) Crystal Farms reduced fat marble jack cheese
3 lb yellow onions
1 T virgin coconut oil
Peel and chop onions. Caramelize in 1 T coconut oil over medium heat. Place one heaping T onions, 1 T salsa verde and one pinch of cheese on each tortilla. Roll up and place in casserole dish coated with cooking spray. Spoon remaining salsa over top and sprinkle with remaining cheese. Bake uncovered at 350 degrees for 30-35 minutes. Yield: 20 enchiladas.0 -
I use the meatless crumbles and make any dish that calls for ground hamburger. Chili, spaghetti, tacos, burritos. My favorite is the Trader Joe's brand but I use all of them. Add a little garlic powder, onion powder, or taco seasoning and it is delish!! I also like the vegan keilbasa with sauted onions, bell pepper, with cous cous.0

I made these the other night and no one could tell they were meatless. I changed the recipe a bit, did not use the tomato sauce, mustard or sugar. I substituted it out with a 14.5 ounce can of petite diced tomatoes and 1-1/2c of organic ketchup and also used a liquid smoke soy sauce then added hot paprika and red pepper flakes to taste.

Serves: 8
Ingredients:
• 1 large onion, chopped
• 1 large green pepper, diced
• 2 tablespoons olive oil
• 1 1/2 cups boiling water
• 2 1/2 cups tomato sauce
• 1 -2 tablespoon chili powder
• 1 pinch pepper
• 1 teaspoon salt
• 1 tablespoon soy sauce
• 1 tablespoon mustard
• 1 tablespoon sugar (I use sucanat)
• 1 1/2 cups dry textured vegetable protein
Directions:
1. Saute onion and green pepper in oil.
2. Add remaining ingredients and simmer together for 20 minutes.

Gonna sound crazy, but bake potato wedges, no oil just salt and pepper and wrap them in romaine. Dip them in chili sauce. It is so good! I'm not a vegan, but I saw so many vegans eating this that I had to try and it was so delicious!0

Check out the happy herbivore (HH) - she has a ton of awesome vegan recipes both on her blog and in cookbooks but you can also google search the HH and you'll find a ton more posted on other blogs by they are by the HH. I cook vegan a lot and always use HH recipes. Love 'em plus they are no fat and healthy too.0
