Have you been to the Hungry Girl website? She has recipes with two or three ingredients each. She calls them "Happy Couples" or "Hot Trios" or something like that. Last night we made Pumpkin Spice muffins--one box of spice cake mix and one can of pumpkin (100% pumpkin puree not pumpkin pie filling). Bake at 350 for 15-20 minutes. You can also use Devil's Food Cake and a can of pumpkin for Chocolate "Brownie" Muffins. Mix them well and don't add anything else. I think they are like 140 calories per muffin and have fiber.

I've been making these allot recently!!
Avocado pasta:
Cooked pasta
Avocado
Some chicken broth
Cream cheese/any type of cheese
Salt and pepper
A bit of lemon juice
Garlic/basil is optional
Blend up a ripe avocado, cheese, broth, salt pepper, and lemon juice. You determine how thick/runny/salty or calorific you want it. Once pasta is cooked, drain, pour pasta back into pot. Then pour avocado Alfredo sauce in with your pasta, heat on low until warm and thick and creamy.
Simple, thick tomato sauce:
Leftover grape/cherry tomato you need to use up fast!? This is basic tomato sauce recipe that can be used to put on pasta, pizza, on eggs, in enchiladas, anything you want!!
A bunch of grape or cherry tomatoes
Chopped onion
Olive oil
Basil (fresh or dry, you decide)
Garlic salt
Pepper
Sugar is optional
Boil tomatoes until skin is peeling. Drain and at this point, you can peel off the skin but I like to leave it on because... That's just me. . Then put boiled tomatoes back into pot with onion and olive oil. Heat on medium low, breaking up the tomatoes as you go. Season with rest of ingredients and definitely taste it and adjust accordingly. At this point, if it is too watery for you, let it simmer on low heat until it gets to desired consistency.
Individual pizza:
Store bought flat bread
The above tomato sauce
Toppings, anything you like!
Preheat oven or toaster oven to 400 degrees Fahrenheit. Assemble pizza with tomato sauce first, then cheese, then other toppings. Bake in preheated oven for 10-15 minutes until bread is crispy.
Flatbread breakfast sandwich
One flat bread
Two eggs
Olive oil
Milk
Cheese optional
Bacon optional
Mushroom optional
Bell pepper optional
Onion optional
Salt pepper
Sliced tomato optional
Baby Spinach optional
Stir fry bacon, mushroom, bell pepper and onion together in a small pan until bell pepper has soften. Crack two eggs, lightly beat with a bit of milk and salt and pepper added in. Pour into pan, let set and flip once brown on the bottom. Meanwhile toast or heat the flat bread, layer with cheese, spinach, and tomato. Once your eggs mixture is done, place on bread, fold in half like a taco and eat with salsa, for sauce or your favorite condiment!!
Easy broiled salmon
Salmon fillets
Lime or lemon juice
Olive oil
Salt and pepper
Paprika for color
Dot salmon with paper towels to get rid of excess moisture. Season with rest of ingredients. Place on greased aluminum foil and broil for 7-10 minutes (depending on size) on one side, flip, then broil for another 7-10 minutes. It's done when you can flake it easily!
Southern greens and beans
A bag of southern greens
A can of smoked black eye peas
Olive oil
Chicken broth
Salt and pepper
Lemon juice
Heat olive oil medium high and slightly stir fry greens until wilted. Then pour the beans in with some chicken broth. Heat till it simmers, cover with lid, turn down heat and cook for 15-20 minutes. Season to your liking.
Salad ideas (my recent favorites):
Precooked beets, goat cheese and spinach
Walnut, purple grapes and goat cheese stuffed endives
