Quinoa Enchilada bake

It's seriously amazing, we usually have it for our meatless Monday dinners but we wanted to try it with chicken and it's so good that way too!

Can cut down on the cheese or use reduced fat if you want.

    It's seriously amazing and so quick to make! I like to add some bell peppers to ours, and only use about half the can of enchilada sauce as its really thin when it's hot.
