    Mediterranean Shrimp Scampi - It's shrimp sauteed with garlic, olive oil, crushed red pepper and oregano. When the shrimp are just starting to turn pink, I move them into a baking dish and deglaze the pan with some white wine and toss in some crushed tomatoes. Once the sauce has reduced down, I pour it over the semi-cooked shrimp, sprinkle the top with feta cheese and bake for 15 minutes to finish cooking the shrimp. Delicious!

    Southwest Buffalo ala Kate - cubed buffalo steak cooked with tomatoes, cilantro, red bell pepper, onion, mushrooms, cumin, and garlic.


    edit - lean beef is a fine substitute for buffalo.

    Everything sounds good but I am not cooking tonight or tomorrow night! Work dinner, usually buffet style and sit down at Music/Dinner venue tomorrow night.....saving calories and exercising!

    Baked Tilapia seasoned with lemon, garlic, dill, and feta...with a dill sauce; steamed cauliflower; and a salad. Hubby is on shift tonight and he hates seafood, so it's fish night here.
